Downtown San Luis Obispo restaurant Eureka! recently launched new menu items with a modern twist. Known for its elevated American selection of craft beer, small batch whiskey, regional wine, and locally-sourced ingredients in a contemporary, rustic- modern atmosphere, Eureka! is one of SLO’s favorite dining destinations for locals and visitors alike.

Inspired by the California state motto, “Eureka! is defined as expressing delight for finding or discovering something,” says Managing Partner Paul Frederick. “Eureka! is an oasis exuberating an exciting ambiance while providing guests with exceptional hospitality, an innovative bar program, live music, sports programming, and a well- rounded dining experience for all to enjoy.”

Every aspect of the Eureka! menu is housemade and sourced from local vendors, from the sauces and dressings to hand-cut fries – and every menu item is prepared fresh daily. Eureka uses 100 percent vegetarian fed, hormone and antibiotic free, all-natural beef. The cocktails contain all-natural ingredients, including freshly squeezed fruit juices, natural sugars, and herbs.

An elevated new American menu

Eureka! is known for creative burgers such as the Catalina Bison Burger with smoked mozzarella and bacon-jalapeño jam, and the Fig Marmalade Burger with goat cheese and spicy porter mustard. Now, adventurous guests can also try a Bone Marrow Burger topped with bone marrow porcini butter, charbroiled onion, mustard aioli, and oven-roasted tomato.

The new menu includes the addition of a Slow-Roasted Beet Salad with toasted walnuts, apples, arugula, goat cheese, orange sections and watermelon pop rocks. The new Short Rib Ragu featuring stone-ground grits, shaved horseradish, and fine herbs and the All Day Breakfast Burrito with flat iron steak, potatoes, ranchero sauce, arugula salad, and topped with a fried hen egg are perfect for the cooler months. In addition to the new savory items, Eureka! has a decadent new dessert, the Apple Crisp featuring caramelized apples, pecan oat crisp, and vanilla bean ice cream.

Beer, whiskey, cocktails & more

Eureka! is well-known for its all-American bar, featuring beer samplers, whiskey tastings, and specialty cocktails. “Our bar offerings are unlike anything found in the area – 100 percent of our craft beer is American, and 100 percent of our liquors are sourced from American small batch distillers,” says co-founder Justin Nedelman.

Recently, Eureka! introduced a cocktail menu with classic and contemporary libations. Highlights from the extensive cocktail list include the Sazerac made with rye, sugar, and bitters, Boulevardier featuring bourbon, vermouth, and bitters, Penicillin with smoked whiskey, ginger, honey, and citrus, Moscow Mule featuring vodka, house-made ginger syrup, and citrus, and the Rosemary’s Ruby Red with gin, rosemary, grapefruit, and citrus.
