Bovino Vineyards and Winery is located in beautiful Templeton, California. Our estate vineyards are centrally situated in the Templeton Gap which is nestled between the Paso Robles Willow Creek and the El Pomar Districts. The Templeton Gap consists of a series of mountain passes created by rivers and creeks in the Santa Lucia Range, through which marine air flows into the region.
The Templeton Gap is the coolest climate of the Paso Robles sub-appellations and receives approximately 20 inches of precipitation per year. The water gap allows marine influences to enter the region which moderate the daily temperatures and increase the amount of time that it takes for grapes to ripen. The elevations in the area range from 700 to 1,800 feet above sea level with the majority of the wineries located between 800 and 940 feet.
The soils were created by alluvium of the Monterey Formation and are largely made up of silty and clay loams. There are some older soils produced from the Paso Robles Formation that are more cemented and shaly. Grapes produced in this region include Cabernet Sauvignon, Carignane, Charbono, Chardonnay, Grenache, Merlot, Petite Sirah, Pinot Gris, Pinot Noir, Primitivo, Sangiovese, Syrah, Tempranillo, Viognier and Zinfandel.

We have larger, state-of-the-art Pieralisi equipment to give the best yield possible. With this new, larger equipment, we have increased our capacity from 1/2 ton to 4.5 tons per hour to better serve you. No job is too large or small. You can’t make world-class oil out of poor-quality olives. The growers do a terrific job of caring for their orchards, and it’s our responsibility to mill their olives into quality oil. Over the years we have milled many prize-winning olive oils, including Best-of-Show and Best-of-Class not only at the California Mid-State Fair in nearby Paso Robles, but also at the Yolo County and Los Angeles County Fairs, two of the three largest olive-oil competitions in the world.
Our Paso Robles wine grapes are grown to promote intense, varietal flavors that can then be sculpted in the cellar into a final artistic statement. Meticulous winemaking practices coax the true varietal essences of the fruit forward, allowing for wines that are full-bodied, rich, and expressive. The rich, concentrated wines of Sculpterra are the result of combining exceptional fruit from the winery’s estate vineyards and select Paso Robles vineyards with meticulous hand-crafted winemaking. Gentle handling, using traditional gravity methods ensures that the integrity of the wines stay intact. Sculpterra wines are aged an average of 12 to 18 months in American, French and Hungarian oak.

Yves and Clotilde Julien began what is now Olea Farm by planting 1200 dwarf olive trees on their hilltop property in Templeton with the intention of making olive oil for their own use. However, they did not anticipate the amount of olives that these trees would yield. What was meant to be a small project eventually grew into Olea Farm.

The Rava’s own more than 1,200 acres of premium vineyards that span from the foothills of the Santa Lucia Range in Monterey County to the Rava Estate in the heart of Paso Robles Wine Country. Owner, Chad Rava oversees and manages all vineyard operations, new plantings and harvest decisions. Paso Robles Vineyards
The estate vineyards start with a 505 continuous acre property, located in the El Pomar District, one of 11 sub appellations in the Paso Robles AVA. Once home to an Arabian Horse Ranch, Rava Estate was established in 2016 by Chad and Lauren Rava.
Located adjacent to Rava Winery, the estate vineyard is planted to 15 signature varietals from Italian and French origins. You will find Grenache, Teroldego, Nebbiolo, Negro Amaro, Tempranillo, Cabernet Sauvignon, Malbec, Petit Verdot, Petite Sirah, Primitivo, Pinot Blanc, Pinot Meunier, Calabrese, Tannat and Merlot.
The vineyard features warm daytime temperatures and cool marine breezes late in the day that flow through the Templeton Gap. The soils are a mix of loam, clay and limestone, providing excellent drainage and ideal growing conditions.

At ONX we focus on farming our crops with the understanding that the fruits of our labors will be realized in a glass of wine… your glass hopefully! There is a French term, elevage, which is applied to wine and it translates to “the educating or upbringing” of wine like parents do with their children. We like to extend that notion into the vineyard and believe that we can train the vines into producing the best possible fruit for wine production.
Our winegrowing goal each year is to raise concentrated and highly expressive fruit. We balance our crop to allow the vines to focus their energy on a limited number of clusters. The vine canopy is manicured to allow dappled sunlight penetration and air movement within the vine canopy. We employ a variety of trellis approaches that match our rootstock, scion, and soil combinations.
Unhindered by convention, the ONX Winemaking Team strives to create balanced wines that reflect both the place the grapes were grown and the vintage in which they were born. From rule breaking to blind blending, each vintage of ONX Wines is completely different, yet delightfully cohesive.
