Castoro Cellars—four decades of sustainable
winemaking rooted in Templeton
Castoro Cellars has been
a leader in winegrowing,
sustainability, and an integral part
of the Paso Robles and Central
Coast community for over 40
years. The Udsens have consis-
tently prioritized doing things
the right way for both people and
the environment, earning SIP
Certification in 2008 and CCOF
Organic Certification in 2007. In
recognition of their decades of
dedication, Castoro was honored
in 2020 by the Paso Robles Wine
Country Alliance as the Environ-
mental Winery of the Year.
Bimmer and Niels Udsen’s
dedication to the environment and
sustainable, responsible farming
is a practice
passed down
by Niels’
Danish
father. Al-
though Niels
was born
in Ventura,
CA, he often
visited Den-
mark and
met Bimmer
there. They
share the
same passion,
vision, and
commitment
to the soil,
wine, people,
and com-
munity.
Castoro
Cellars was established in 1983,
when fewer than twenty wineries
operated in the Paso Robles area;
today, that number has grown to
over 250. The Udsens began their
journey sourcing fruit and making
wine, eventually building a winery
and tasting room, and purchasing
Where sustainable,
organic wine is a
family affair
property. By 1990, they were fully
involved in the entire operation—
and haven’t looked back since, but
they do look
forward.
Today,
over four
acres of
solar panels
offset the
power
needed to
operate
the winery
and tast-
ing room.
Castoro is
the largest
grower of
organic
grapes on
the Central
Coast. The
roughly
1400 acres
of 100% certified organic vine-
yards grow 27 different varietals of
French, Italian, and Spanish grapes
in 14 vineyards.
