produced olive oil and balsamic
vinegar. The store sources high-
quality, seal-certified extra virgin
olive oil (EVOO).
Seal-certified olive oil is assur-
ance to the retailer and customer
that the product is 100% EVOO.
The certification process includes
extraction guidelines that prohibit
chemicals or excessive heat, require
less than .5% oleic acid in the oil,
and a blind taste test.
