
Paso Robles’ best-kept secret offers a butcher shop, dining, and a brewery
—Primal House is a family business run by Alyssa Leal and Bud Cole, and Alyssa’s parents, Teresa and Jimmy Leal. Opening in 2025, the idea was a dream for them for a long time. Alyssa always wanted to open a market, and Bud is a 4th-generation cattle rancher. They blended their skills, and Primal House was born.
“We started with the idea of just a butcher shop and market,” Alyssa Leal explains, “and then added the restaurant and brewery. We wanted to create a destination where you could eat the steaks that were being cut in our butcher shop and enjoy a great beer as well.”
Primal House is a great example of the farm-to-table movement, which the team rebrands as ranch-to-table. As a cattle rancher, Bud Cole has his own herd and connections to local ranchers. Leal explains, “We aim to bring the small ranchers and farmers back to the local markets.” A visit to Primal House is quite literally a taste of Paso Robles.
Primal House is an open concept with the butcher shop front and center. Guests can choose their favorite cut of meat, traditional sausages, or more exotic choices such as the savory duck and peach combo or elote corn pork sausage. They are committed to top-quality meats that are raised locally and cut fresh.
A quick glance through the market, and it’s clear that they choose their items carefully. Every item is top quality. There are three different dining areas. There’s a casual eatery next to the market and butcher shop, the taproom, and a fine dining room open in the evenings. The kitchen is open so guests can see their food being made, and just behind it is the large brewery and taproom where they craft their specialty beers. It wouldn’t be complete without the bar, which elevates the brewery experience into something unique and special.

Brewery flights, Mahjong, and make your own sourdough
Of course, the eatery and restaurant serve the meats from the butcher shop as well as several items from the market. It’s a one-stop shop for people who like good food. They focus on cozy comfort classics. The traditional menu offers a sausage sampler with sausages from the butcher, and hamburgers with regular or gluten-free buns, farmer’s stew, pasta, and, of course, steaks. Primal House is a protein-lover’s dream.
Brewmaster Bret Stitzmen’s brewing style is classic German brewing. With names like Back to Bako Lager, Livin’ the Dream Cream Ale, and Cherry Chocolate Dunkel, it’s hard to choose just one beer to try. Fortunately, guests can sample a taproom flight of any four beers. The bartender even tells you which order to drink them in for the best experience.
The team has focused on making Primal House a fun place to hang out. There’s live music Thursday through Sunday. They also host classes such as Mahjong and sourdough bread making. Wine events and private events are regularly hosted. Check out the website for upcoming events.
