We Olive was born from passion; a passion for locally sourced, healthy, delicious, artisan extra virgin olive oil! It was nearly a decade ago when we first noticed an increase in the consumer’s demand for this type of product; so, coupled with this knowledge and our own passion, the first We Olive store was opened.

Opening that first store was a dream come true for us. We had officially created a place where local growers, chefs, and guests alike could experience, learn about, and purchase the California-made olive oil we’d come to know and love. Of course, having a wonderful product isn’t the only key to success. From the very beginning we’ve been committed to exceeding our guests’ expectations in product quality, customer service, and providing an unparalleled educational & culinary experience. They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.

Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.

Baileyana was created over 30 years ago by the Niven family, pioneering founders of the Edna Valley AVA. Today, Baileyana wines are an expression of classic cool-climate varietals with each wine sourced from select blocks from our estate Paragon Vineyard—planted in 1973. Baileyana’s range of Chardonnays, Pinot Noirs, Syrahs, and sparkling wines are all crafted by our dynamic winemaking team. Located in the heart of the Willow Creek district on the westside of Paso Robles, Pelletiere Estate Vineyard & Winery can be found on a cozy corner on Township Road just off Highway 46w in the beautiful foothills of west Paso. The property has a local history dating back to the late 1890’s. The original Farmhouse has been lovingly updated and sits proudly on our estate. The Pelletiere Estate vineyard, rich in limestone soils was planted in 1993-1996, and is family owned & operated with a commitment to the traditions of fine winemaking and responsible stewardship of its vineyard land for future generations to savor and uphold.

Its south-facing sloped terrain, rocky limestone soils, cool coastal breezes, and diurnal fluctuation in temperature create, above all an estate ideal for wine growing. The rich, concentrated wines of Sculpterra are the result of combining exceptional fruit from the winery’s estate vineyards and select Paso Robles vineyards with meticulous hand-crafted winemaking. Gentle handling, using traditional gravity methods ensures that the integrity of the wines stay intact. Sculpterra wines are aged an average of 12 to 18 months in American, French and Hungarian oak.

August Ridge was established by John Backer and Jill Zamborelli Backer in the spring of 2001 with the purchase of 40 acres of rolling hills in Creston. From the beginning their goal was to produce wines that combine the robust styling of the best California wines with the restrained elegance of the classic wines from northern and central Italy. Their passion for the project comes from a love of cooking, eating and sharing meals with friends which leads directly to August Ridge wine style. This dream is a natural extension of both the Backer and Zamborelli families. John’s family has been growing grapes for four generations dating back to the 1800’s while Jill’s family brings the robust Italian food and traditions from a small town just outside of Rome, Italy.

Bovino Vineyards and Winery is located in beautiful Templeton, California.  Our estate vineyards are centrally situated in the Templeton Gap which is nestled between the Paso Robles Willow Creek and the El Pomar Districts.  The Templeton Gap consists of a series of mountain passes created by rivers and creeks in the Santa Lucia Range, through which marine air flows into the region.

The Templeton Gap is the coolest climate of the Paso Robles sub-appellations and receives approximately 20 inches of precipitation per year.  The water gap allows marine influences to enter the region which moderate the daily temperatures and increase the amount of time that it takes for grapes to ripen.  The elevations in the area range from 700 to 1,800 feet above sea level with the majority of the wineries located between 800 and 940 feet.

The soils were created by alluvium of the Monterey Formation and are largely made up of silty and clay loams. There are some older soils produced from the Paso Robles Formation that are more cemented and shaly.  Grapes produced in this region include Cabernet Sauvignon, Carignane, Charbono, Chardonnay, Grenache, Merlot, Petite Sirah, Pinot Gris, Pinot Noir, Primitivo, Sangiovese, Syrah, Tempranillo, Viognier and Zinfandel.

History:

In the early 1970’s Michael Gill began his own practice as a dentist in Bakersfield. In 1977 during his weekend retreats to the central coast, Gill visited a barren 25 acres for sale in Peachy Canyon. At the time he acknowledged he had little intuition of the potential this property had for growing grapes. However his friend Robert Nadeau recognized its potential and lay out the grid work for the vineyard in 1998. After years of hard work, the perfect temperature and premier sole has created a perfect grape growing property. Now Gill Cellars is producing a modest 1,000 cases annually, ensuring quality and control in every bottle.

About:

Growing up in the oil fields of Taft, Gill was first introduced to fine wines during his postgraduate years in dental school. His best friends parents were professional photographers, and were hired to create extravagant displays of fine wine, cheeses, and food. The fate of these displays were at the mercy of Michael and his friends appetites, which would act as the initial catalyst of his taste for fine wine.

Sarzotti Winery and Vineyard serves as the Sarzotti family’s vehicle for sharing what they love to do—make wine. Jim Sarzotti and his wife Cheryl as well as their son James and his wife Jenne, all live and work on the Sarzotti Winery and Vineyards property in beautiful Templeton, CA. James and Jenne’s children also live on the property. The Sarzottis have farming in their blood—fifteen years ago they relocated to Paso Robles from Southern California at James’ suggestion. James knew that his father had always loved to grow grapes and make wine, and saw in Paso Robles an opportunity to do this together as a family.
