The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.

Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.

Our vineyards are located six miles north of Paso Robles, CA, near the eastern slope of the Santa Lucia Mountains. The mainly southern-facing, rolling hill vineyards are planted on well-drained, moderately deep, silty clay loam soils. Hot summer days and cool nights provide ideal growing conditions for the vines. The history behind Donatoni Winery is apparent to any visitor to this Westside Paso Robles winery. Memorabilia and photographs from the owners’ history in the airline industry cover the walls and adorn the tasting bar. And, owners Hank Donatoni and Sandi Baird are happy to elaborate on the story that the tasting room theme tells. Though they are retired now, Hank and Sandi’s connection to the airline business is still strong. Many of their friends were once co-workers, and even members of the aviation community they have never met find their way to Donatoni through their shared histories. Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.

Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. THE ASUNCION RIDGE EXPERIENCE

The journey began when Winemaker, Philip Krumal and Entrepreneur, Michael Dilsaver met in a wine appreciation class in 1995. Their love of fine wine, great food and inspiring friendships lead to the ultimate dream of “living the wine country dream.” Their first Pinot Noir vineyard was planted in 2002 in the Santa Lucia Mountains overlooking Morro Bay, thus starting the Asuncion Ridge story. Philip and Michael’s philosophy is a simple one…”wine begins in the vineyard.” To this end, a watchful eye is given to every step of the process from “the vineyard to the bottle.”

Four Lanterns resides on 35 acres on the west side of Paso Robles in the formidable Willow Creek AVA. This area, renowned for hot days, cool nights and soil riddled with calcareous stone, provides a perfect environment for making exceptional wines. Jackie’s Vineyard, located in the Templeton Gap AVA, is the location where their Bordeaux varietals grow.

Specializing in wine varietals native to France’s Rhone Valley & Bordeaux regions, Four Lanterns focuses on making estate wines, capitalizing on the natural strengths of their land. The resulting wines are beautifully complex, balanced, and wonderful to drink.

The Rotta tasting room and winery is located in the Templeton hills, and features a unique blend of history and modern winemaking technology. One thing that’s definitely staying is the old redwood sign with “Rotta Winery” neatly hand stenciled in white paint. “I painted that sign when I was ten years old,” remembered Giubbini.

The Hope family arrived in Paso Robles in 1978 in search of land and new opportunity. Kiler Ridge Olive Farm is a 58-acre family farm in the coastal hills of central California, just minutes from downtown Paso Robles. Our central coast climate and chalky soil are ideal for olives. We use sustainable farming practices, and currently maintain 2500 olive trees — varieties originating from Italy and Sicily.

The farm’s first year of olive oil production was 2010, and that year, as well as each following year, our Kiler Ridge Extra Virgin Olive Oils have won medals in important olive oil competitions, including the Los Angeles International Olive Oil Competition, the Der Feinschmecker international competition in Germany, and the California Olive Oil Council competition.

During October, November and December, we are harvesting our olives and releasing limited quantities of our extremely fresh Olio Nuovo olives oils. Living the Dream

Pinot Noir is the driving passion of Marc Goldberg and Maggie D’Ambrosia, husband and wife owners of Windward Vineyard. Windward Vineyard is dedicated exclusively to producing Burgundian style Pinot Noir. To make the “Great American Pinot Noir,” one that rivals those produced in Burgundy, is the couple’s passion.

Marc and Maggie purchased and planted the vineyard in 1989 based upon the terroir and microclimate of the Paso Robles Westside. The combination of the cooling Pacific breezes, the calcareous soil and the 50 degree daily drop in temperature produce exemplary Pinot Noir.

With the Burgundian French term, “Monopole” vision of total control over both the vineyard and the winemaking, the 15-acre vineyard is planted to four notable French clones.

Windward Vineyard is dedicated to putting Paso Robles’ Pinot Noir back on the map, following in the footsteps of two significant figures in California wine history. In the late 1960’s, consultant Andre Tchelistcheff supervised the Paso Robles Hoffman Mountain Ranch property of Dr. Stanley Hoffman. In the 1970’s, Hoffman’s Pinot Noirs gained worldwide recognition, and were drinking well over 20 years later.

Since the 1993 debut in 1995, each of Windward’s SOLD OUT vintages have achieved inspiring acclaim, particularly within the community of wine aficionados who appreciate the layered complexity of Burgundian styled Pinot Noir. Marc explains. “We knew we could count on the vineyard to produce formidable fruit. It is living up to our expectations as it matures and continues to develop layered complexity.”

Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”

Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually.
