At ONX we focus on farming our crops with the understanding that the fruits of our labors will be realized in a glass of wine… your glass hopefully! There is a French term, elevage, which is applied to wine and it translates to “the educating or upbringing” of wine like parents do with their children. We like to extend that notion into the vineyard and believe that we can train the vines into producing the best possible fruit for wine production.
Our winegrowing goal each year is to raise concentrated and highly expressive fruit. We balance our crop to allow the vines to focus their energy on a limited number of clusters. The vine canopy is manicured to allow dappled sunlight penetration and air movement within the vine canopy. We employ a variety of trellis approaches that match our rootstock, scion, and soil combinations.
Unhindered by convention, the ONX Winemaking Team strives to create balanced wines that reflect both the place the grapes were grown and the vintage in which they were born. From rule breaking to blind blending, each vintage of ONX Wines is completely different, yet delightfully cohesive.
As you enter The Hunt Cellars Tasting room, the fun wine experience begins, as you are greeted with either live music or our white grand player piano. Kiler Ridge Olive Farm is a 58-acre family farm in the coastal hills of central California, just minutes from downtown Paso Robles. Our central coast climate and chalky soil are ideal for olives. We use sustainable farming practices, and currently maintain 2500 olive trees — varieties originating from Italy and Sicily.
The farm’s first year of olive oil production was 2010, and that year, as well as each following year, our Kiler Ridge Extra Virgin Olive Oils have won medals in important olive oil competitions, including the Los Angeles International Olive Oil Competition, the Der Feinschmecker international competition in Germany, and the California Olive Oil Council competition.
During October, November and December, we are harvesting our olives and releasing limited quantities of our extremely fresh Olio Nuovo olives oils. In February through April, we release our new season’s clarified and Certified Extra Virgin Olive Oils. Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.
Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. The history behind Donatoni Winery is apparent to any visitor to this Westside Paso Robles winery. Memorabilia and photographs from the owners’ history in the airline industry cover the walls and adorn the tasting bar. And, owners Hank Donatoni and Sandi Baird are happy to elaborate on the story that the tasting room theme tells. Though they are retired now, Hank and Sandi’s connection to the airline business is still strong. Many of their friends were once co-workers, and even members of the aviation community they have never met find their way to Donatoni through their shared histories. Spend the afternoon under the shady oaks of the beautiful Templeton Community Park and enjoy dancing, wine tasting, shopping and gorgeous spring weather!
