The original Farmhouse has been lovingly updated and sits proudly on our estate. The Pelletiere Estate vineyard, rich in limestone soils was planted in 1993-1996, and is family owned & operated with a commitment to the traditions of fine winemaking and responsible stewardship of its vineyard land for future generations to savor and uphold.

Its south-facing sloped terrain, rocky limestone soils, cool coastal breezes, and diurnal fluctuation in temperature create, above all an estate ideal for wine growing. Here we produce exceptional Italian varietals that honor our Italian heritage and those of our predecessor. Today, 100 percent of Pelletiere Estate wines are sourced from its sustainably-farmed estate-grown Italian varieties which include; Sangiovese, Nebbiolo, Montepulciano, Lagrein, Aglianico, and Primitivo, as well as, our Syrah and Viognier. The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.

Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.

We Olive was born from passion; a passion for locally sourced, healthy, delicious, artisan extra virgin olive oil! It was nearly a decade ago when we first noticed an increase in the consumer’s demand for this type of product; so, coupled with this knowledge and our own passion, the first We Olive store was opened.

Opening that first store was a dream come true for us. We had officially created a place where local growers, chefs, and guests alike could experience, learn about, and purchase the California-made olive oil we’d come to know and love. Of course, having a wonderful product isn’t the only key to success. From the very beginning we’ve been committed to exceeding our guests’ expectations in product quality, customer service, and providing an unparalleled educational & culinary experience. The combination of our educational “Olive Oil Experience” and a tasting-oriented wine bar make We Olive a unique destination for foodies everywhere.

Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.

Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. Founded in 2003, Line Shack Winery was the realization of over two decades of Balentine family winemaking experience. With this venture, owner/winemaker team Bob and Daphne Balentine set out to produce affordable, world-class wines from California’s Central Coast, particularly from the new San Antonio Valley AVA in Southern Monterey County. The San Antonio Valley is the site of California’s second mission, Mission San Antonio, where some of the first wine grapes were ever planted in California. This region provides warm days followed by cool nights, enabling fruit to achieve extended hang time and maximize its true varietal characteristics.

Our vineyards are located in the San Antonio Valley, a 1200 foot high Mountain Valley in the heart of the Santa Lucia mountain range and several miles inland from the Pacific Ocean on the Central Coast of California. The region is quickly becoming renowned for the excellent warm-climate Bourdeaux and Rhone grape varieties. The wines produced are intensely flavored, full-bodied reds and whites of exceptional character.

To round out our portfolio, we source small amounts of Pinot Noir and Chardonnay fruit from the cooler Santa Lucia Highlands, also located in Monterey County. All of our wines are made in an approachable style that is both respectful to the varietal and representative of the California South Coast terroir. Four Lanterns resides on 35 acres on the west side of Paso Robles in the formidable Willow Creek AVA. This area, renowned for hot days, cool nights and soil riddled with calcareous stone, provides a perfect environment for making exceptional wines. Jackie’s Vineyard, located in the Templeton Gap AVA, is the location where their Bordeaux varietals grow.

Specializing in wine varietals native to France’s Rhone Valley & Bordeaux regions, Four Lanterns focuses on making estate wines, capitalizing on the natural strengths of their land. The resulting wines are beautifully complex, balanced, and wonderful to drink.

A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Living the Dream

Pinot Noir is the driving passion of Marc Goldberg and Maggie D’Ambrosia, husband and wife owners of Windward Vineyard. Windward Vineyard is dedicated exclusively to producing Burgundian style Pinot Noir. To make the “Great American Pinot Noir,” one that rivals those produced in Burgundy, is the couple’s passion.

Marc and Maggie purchased and planted the vineyard in 1989 based upon the terroir and microclimate of the Paso Robles Westside. The combination of the cooling Pacific breezes, the calcareous soil and the 50 degree daily drop in temperature produce exemplary Pinot Noir.

With the Burgundian French term, “Monopole” vision of total control over both the vineyard and the winemaking, the 15-acre vineyard is planted to four notable French clones.

Windward Vineyard is dedicated to putting Paso Robles’ Pinot Noir back on the map, following in the footsteps of two significant figures in California wine history. In the late 1960’s, consultant Andre Tchelistcheff supervised the Paso Robles Hoffman Mountain Ranch property of Dr. Stanley Hoffman. In the 1970’s, Hoffman’s Pinot Noirs gained worldwide recognition, and were drinking well over 20 years later.

Since the 1993 debut in 1995, each of Windward’s SOLD OUT vintages have achieved inspiring acclaim, particularly within the community of wine aficionados who appreciate the layered complexity of Burgundian styled Pinot Noir. Marc explains. “We knew we could count on the vineyard to produce formidable fruit. It is living up to our expectations as it matures and continues to develop layered complexity.”
