The Rotta tasting room and winery is located in the Templeton hills, and features a unique blend of history and modern winemaking technology. One thing that’s definitely staying is the old redwood sign with “Rotta Winery” neatly hand stenciled in white paint. “I painted that sign when I was ten years old,” remembered Giubbini.

Ray and Pam Derby moved to the Central Coast area in the early 1990’s with the intention of retiring. In 1998, they purchased their first vineyard property, now known as Derbyshire Vineyard and their thoughts of retirement were replaced by the inspiration of being a part of the wine world. In the years following, Ray next acquired the historic Laura’s Vineyard (in east Paso) and then the Westside property, now called the Derby Vineyard. Needless to say, their plans of retirement never came to fruition.

After experiencing nearly a decade as a grape grower, the potential strengths of each property became apparent and in 2008, Ray and Pam launched Derby Wine Estates. They are extremely selective in terms of what goes into the bottle under the Derby label. The commitment to the land is appreciable, with only 20 hand-selected acres being used to provide fruit for their own brand. Grapes from the remainder (some 90%of their total acreage) are sold to some of the finest wine producers in California.

THE ASUNCION RIDGE EXPERIENCE

The journey began when Winemaker, Philip Krumal and Entrepreneur, Michael Dilsaver met in a wine appreciation class in 1995. Their love of fine wine, great food and inspiring friendships lead to the ultimate dream of “living the wine country dream.” Their first Pinot Noir vineyard was planted in 2002 in the Santa Lucia Mountains overlooking Morro Bay, thus starting the Asuncion Ridge story. Philip and Michael’s philosophy is a simple one…”wine begins in the vineyard.” To this end, a watchful eye is given to every step of the process from “the vineyard to the bottle.”

As native New Orleanians, Tealy and Greg grew up in a culture of great jazz and good food. French wine was the principal accompliment to New Orleans cuisine at the time. Living in Europe during the 70’s and 80’s, enhanced our wine experience and appreciation of European wines. In the 90’s we returned to California and developed a greater appreciation of California wines.

After working for an international company for thirty years, we decided to start a second career dedicated to growing grapes and making great wines at affordable prices that enhance the culinary experience. After searching for a vineyard, we settled on the Central Coast of California in Paso Robles in 2007. It is still a place where the vineyard farmer and the wine maker are the same person and winemaking starts in the vineyard.

LXV’s winery is located in the exclusive Willow Creek area of the westside of Paso Robles near Linne Colado and Saxum. The Mittals currently source their fruit from other vineyards nearby, but have land set aside for planting some day.

The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.

Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.

They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.

Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.

Opolo’s estate vineyards were established from 1994-1996, with sites on both the west and east side of Paso Robles. The topographically diverse, coastal landscape of the westside vineyards provides for an intense and unique flavor profile. The heat and dryness of the east side vineyard make it an ideal microclimate for growing Bordeaux varietals. Home to a wide range of varietals, the estate vineyards help allow the team at Opolo to create many unique single varietals as well as award winning blends.

Most important in making high quality wine is starting with high quality grapes. Opolo’s vineyard team carefully monitors each lot of grapes throughout the season in order to produce the highest quality fruit possible. From taking leaf, petiole, and soil samples, to monitoring water uptake in the vines, all aspects of viticulture is carefully notated and examined with the intent of producing only high quality fruit for our winery. The entire Opolo production team works together every year to provide the best quality product possible.

SUSTAINABILITY

At Opolo we believe a strong, cooperative relationship with the land and our environment is crucial.  We practice sustainable methods in both the winery and vineyard operations in order to preserve our environment, water and local wildlife. Opolo is a “SIP” Certified operation as well as certified organic by “CCOF” in our 64 acre walnut orchard.  We continue to be great stewards of the land and invite you to come to our vineyards and see our operations!

Row Crops

We grow barley between the planting rows in order to hold moisture in place and prevent erosion during the winter rains (when there is rain) and instead of cutting and removing the barley, we simply mow it in place to add beneficial nutrients back to the soil.

Owl Boxes

Owl boxes make great homes for nesting owls, as well as provide a natural rodent and pest control in the vineyard.

Constructed Wetlands

Water is recycled at Opolo through our two-tank wetlands’ system, which uses marine plants to filter the water so it can be reused in the vineyard. The wetlands also provide a habitat for beneficial microorganisms, insects, and birds.

Specializing in wine varietals native to France’s Rhone Valley & Bordeaux regions, Four Lanterns focuses on making estate wines, capitalizing on the natural strengths of their land. The resulting wines are beautifully complex, balanced, and wonderful to drink.

Jim Sarzotti and his wife Cheryl as well as their son James and his wife Jenne, all live and work on the Sarzotti Winery and Vineyards property in beautiful Templeton, CA. James and Jenne’s children also live on the property. The Sarzottis have farming in their blood—fifteen years ago they relocated to Paso Robles from Southern California at James’ suggestion. James knew that his father had always loved to grow grapes and make wine, and saw in Paso Robles an opportunity to do this together as a family.

1122 Cocktail Lounge is a new concept for Paso Robles, a speakeasy cocktail lounge. The lounge is located at 1122 Railroad Street in a mysterious large wooden door only marked with its logo nearby. Press the doorbell and a host will open a small window. If there is room available, they will seat you. If not they will let you know how many groups are in front of you and they will page your cell phone when a table is ready. They are not accepting reservations. The bar has been open to the public since June 8.

The concept was developed by the owners of Fish Gaucho and Pappy MacGregor’s and is located directly behind Pappy’s on the same property lot.

True to a speakeasy, the venue is fairly quiet with good background music. The menu is filled with delicious craft cocktails of all kinds.
