The history behind Donatoni Winery is apparent to any visitor to this Westside Paso Robles winery. Memorabilia and photographs from the owners’ history in the airline industry cover the walls and adorn the tasting bar. And, owners Hank Donatoni and Sandi Baird are happy to elaborate on the story that the tasting room theme tells. Though they are retired now, Hank and Sandi’s connection to the airline business is still strong. Many of their friends were once co-workers, and even members of the aviation community they have never met find their way to Donatoni through their shared histories. Eos, the Greek Goddess of Dawn, opened the gates of heaven each morning allowing the Sun to rise. Fiercely passionate, she was cursed by Aphrodite for having an affair with Ares. Her punishment was an insatiable appetite for young men. At Eos – the winery – we’re just as passionate as our namesake, but our insatiable appetite is more wholesomely geared towards the production of great wines. Since the mid-1980s, we have built our reputation on dense reds, complex whites and luscious dessert wines from great AVAs throughout the state.

You can’t make world-class oil out of poor-quality olives. The growers do a terrific job of caring for their orchards, and it’s our responsibility to mill their olives into quality oil. Over the years we have milled many prize-winning olive oils, including Best-of-Show and Best-of-Class not only at the California Mid-State Fair in nearby Paso Robles, but also at the Yolo County and Los Angeles County Fairs, two of the three largest olive-oil competitions in the world.
In Italian, Fratelli Perata means Perata Brothers. Maternal Grandparents Brothers, Gino and Joe Perata, rekindled the winemaking history of their father, grandfather and great-uncle when they established their winery using grapes grown on their 31 acre vineyard. Sons of Italian immigrants, Gino and Joe learned winemaking at the knees of their father and great-uncle who produced hundreds of gallons of wine for family and friends while living in Camarillo located in Ventura County, California. Gino and Joe were taught from the very beginning about the need for hands-on work to produce top quality wines. Kiler Ridge Olive Farm is a 58-acre family farm in the coastal hills of central California, just minutes from downtown Paso Robles. Our central coast climate and chalky soil are ideal for olives. We use sustainable farming practices, and currently maintain 2500 olive trees — varieties originating from Italy and Sicily.
The farm’s first year of olive oil production was 2010, and that year, as well as each following year, our Kiler Ridge Extra Virgin Olive Oils have won medals in important olive oil competitions, including the Los Angeles International Olive Oil Competition, the Der Feinschmecker international competition in Germany, and the California Olive Oil Council competition.
During October, November and December, we are harvesting our olives and releasing limited quantities of our extremely fresh Olio Nuovo olives oils. In February through April, we release our new season’s clarified and Certified Extra Virgin Olive Oils. A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years.
