OUR WINEMAKING PHILOSOPHY
At JUSTIN, we combine traditional Old World methods—like hand-harvesting and small-barrel aging in French oak—with New World technology. For example: the “Air Knife,” an ingenious process invented by our winemakers, boosts grape quality and efficiency.
Once the grapes are harvested, our winemakers—some of the best in the business—gather to sort, select, age, taste, blend and decide what goes into every bottle.

Founded in 2003, Line Shack Winery was the realization of over two decades of Balentine family winemaking experience. With this venture, owner/winemaker team Bob and Daphne Balentine set out to produce affordable, world-class wines from California’s Central Coast, particularly from the new San Antonio Valley AVA in Southern Monterey County. The San Antonio Valley is the site of California’s second mission, Mission San Antonio, where some of the first wine grapes were ever planted in California. This region provides warm days followed by cool nights, enabling fruit to achieve extended hang time and maximize its true varietal characteristics.
Our vineyards are located in the San Antonio Valley, a 1200 foot high Mountain Valley in the heart of the Santa Lucia mountain range and several miles inland from the Pacific Ocean on the Central Coast of California. The region is quickly becoming renowned for the excellent warm-climate Bourdeaux and Rhone grape varieties. The wines produced are intensely flavored, full-bodied reds and whites of exceptional character.
To round out our portfolio, we source small amounts of Pinot Noir and Chardonnay fruit from the cooler Santa Lucia Highlands, also located in Monterey County. All of our wines are made in an approachable style that is both respectful to the varietal and representative of the California South Coast terroir. As Monterey County natives, we are proud to showcase wines from this beautiful region! We look forward to sharing our family tradition with you and yours!

History:
In the early 1970’s Michael Gill began his own practice as a dentist in Bakersfield. In 1977 during his weekend retreats to the central coast, Gill visited a barren 25 acres for sale in Peachy Canyon. At the time he acknowledged he had little intuition of the potential this property had for growing grapes. However his friend Robert Nadeau recognized its potential and lay out the grid work for the vineyard in 1998. After years of hard work, the perfect temperature and premier sole has created a perfect grape growing property. Now Gill Cellars is producing a modest 1,000 cases annually, ensuring quality and control in every bottle.
About:
Growing up in the oil fields of Taft, Gill was first introduced to fine wines during his postgraduate years in dental school. His best friends parents were professional photographers, and were hired to create extravagant displays of fine wine, cheeses, and food. The fate of these displays were at the mercy of Michael and his friends appetites, which would act as the initial catalyst of his taste for fine wine.

They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.
Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.
Opolo’s estate vineyards were established from 1994-1996, with sites on both the west and east side of Paso Robles. The topographically diverse, coastal landscape of the westside vineyards provides for an intense and unique flavor profile. The heat and dryness of the east side vineyard make it an ideal microclimate for growing Bordeaux varietals. Home to a wide range of varietals, the estate vineyards help allow the team at Opolo to create many unique single varietals as well as award winning blends.
SUSTAINABILITY
At Opolo we believe a strong, cooperative relationship with the land and our environment is crucial. We practice sustainable methods in both the winery and vineyard operations in order to preserve our environment, water and local wildlife. Opolo is a “SIP” Certified operation as well as certified organic by “CCOF” in our 64 acre walnut orchard. We continue to be great stewards of the land and invite you to come to our vineyards and see our operations!
Row Crops
We grow barley between the planting rows in order to hold moisture in place and prevent erosion during the winter rains (when there is rain) and instead of cutting and removing the barley, we simply mow it in place to add beneficial nutrients back to the soil.
Owl Boxes
Owl boxes make great homes for nesting owls, as well as provide a natural rodent and pest control in the vineyard.
Constructed Wetlands
Water is recycled at Opolo through our two-tank wetlands’ system, which uses marine plants to filter the water so it can be reused in the vineyard. The wetlands also provide a habitat for beneficial microorganisms, insects, and birds.
