Our vineyards are located six miles north of Paso Robles, CA, near the eastern slope of the Santa Lucia Mountains. The mainly southern-facing, rolling hill vineyards are planted on well-drained, moderately deep, silty clay loam soils. Hot summer days and cool nights provide ideal growing conditions for the vines. Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually. They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.
Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.
Opolo’s estate vineyards were established from 1994-1996, with sites on both the west and east side of Paso Robles. The topographically diverse, coastal landscape of the westside vineyards provides for an intense and unique flavor profile. The heat and dryness of the east side vineyard make it an ideal microclimate for growing Bordeaux varietals. Home to a wide range of varietals, the estate vineyards help allow the team at Opolo to create many unique single varietals as well as award winning blends.
SUSTAINABILITY
At Opolo we believe a strong, cooperative relationship with the land and our environment is crucial. We practice sustainable methods in both the winery and vineyard operations in order to preserve our environment, water and local wildlife. Opolo is a “SIP” Certified operation as well as certified organic by “CCOF” in our 64 acre walnut orchard. We continue to be great stewards of the land and invite you to come to our vineyards and see our operations!
Row Crops
We grow barley between the planting rows in order to hold moisture in place and prevent erosion during the winter rains (when there is rain) and instead of cutting and removing the barley, we simply mow it in place to add beneficial nutrients back to the soil.
Owl Boxes
Owl boxes make great homes for nesting owls, as well as provide a natural rodent and pest control in the vineyard.
Constructed Wetlands
Water is recycled at Opolo through our two-tank wetlands’ system, which uses marine plants to filter the water so it can be reused in the vineyard. The wetlands also provide a habitat for beneficial microorganisms, insects, and birds.
In Italian, Fratelli Perata means Perata Brothers. Maternal Grandparents Brothers, Gino and Joe Perata, rekindled the winemaking history of their father, grandfather and great-uncle when they established their winery using grapes grown on their 31 acre vineyard. Sons of Italian immigrants, Gino and Joe learned winemaking at the knees of their father and great-uncle who produced hundreds of gallons of wine for family and friends while living in Camarillo located in Ventura County, California. Claiborne & Churchill is a small, family owned and operated winery, founded in 1983 and located in the heart of the Edna Valley, just outside San Luis Obispo, California. Inspired by the wines of Alsace, we specialize in premium dry wines made from Riesling, Gewürztraminer, and Pinot Gris grapes, as well as handcrafted Pinot Noir from several nearby vineyards. We also produce small lots of other wines, including a Dry Muscat, Chardonnay, Syrah, Cabernet Sauvignon, Sparkling Brut Rose, and a Port-style wine.
Wild Coyote Winery is famously known as the House-Of-Reds (big, bold, non-filtered) wines. Limited estate grown, dry farmed, and producing; Zinfandel, Merlot, Syrah, Malbec, Mourvedre, Tannat, Tempranillo, Rose’-of-Syrah, Late Harvest Syrah, and Zinfandel Port.
Wild Coyote Estate Winery is a true wine country retreat, also home to a unique Santa Fe style Bed & Breakfast (B&B) right in the heart of the Paso Robles West-side wine region of Central Coast, California. Also newly added, a guest house vacation rental (House-Of-Zin) for families and larger groups. We can also hold private events, weddings, and corporate functions.

Our philosophy is to be a farmer first, and then a winemaker. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as “full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling, all from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our (15) acres Westside Paso Robles grapes, and less than 2,000 cases in total production annually, then so be it. A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years. The rich, concentrated wines of Sculpterra are the result of combining exceptional fruit from the winery’s estate vineyards and select Paso Robles vineyards with meticulous hand-crafted winemaking. Gentle handling, using traditional gravity methods ensures that the integrity of the wines stay intact. Sculpterra wines are aged an average of 12 to 18 months in American, French and Hungarian oak.
