The Rotta tasting room and winery is located in the Templeton hills, and features a unique blend of history and modern winemaking technology. One thing that’s definitely staying is the old redwood sign with “Rotta Winery” neatly hand stenciled in white paint. “I painted that sign when I was ten years old,” remembered Giubbini.

Founded in 2003, Line Shack Winery was the realization of over two decades of Balentine family winemaking experience. With this venture, owner/winemaker team Bob and Daphne Balentine set out to produce affordable, world-class wines from California’s Central Coast, particularly from the new San Antonio Valley AVA in Southern Monterey County. The San Antonio Valley is the site of California’s second mission, Mission San Antonio, where some of the first wine grapes were ever planted in California. This region provides warm days followed by cool nights, enabling fruit to achieve extended hang time and maximize its true varietal characteristics.
Our vineyards are located in the San Antonio Valley, a 1200 foot high Mountain Valley in the heart of the Santa Lucia mountain range and several miles inland from the Pacific Ocean on the Central Coast of California. The region is quickly becoming renowned for the excellent warm-climate Bourdeaux and Rhone grape varieties. The wines produced are intensely flavored, full-bodied reds and whites of exceptional character.
To round out our portfolio, we source small amounts of Pinot Noir and Chardonnay fruit from the cooler Santa Lucia Highlands, also located in Monterey County. All of our wines are made in an approachable style that is both respectful to the varietal and representative of the California South Coast terroir. As Monterey County natives, we are proud to showcase wines from this beautiful region! We look forward to sharing our family tradition with you and yours!
A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years. The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.
Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.

This sanctuary rescues horses that have been abandoned, neglected or abused. Its mission is to eliminate the causes of equine suffering through education and community outreach programs. We are a tiny winery located on a Westside hilltop in Paso Robles. We craft wines that are a fascinating marriage of power and elegance. We take what comes from the vineyard and keep it simple and pure. Our grapes are always encouraged to speak for themselves, and if you treat them with the utmost of care, they will always quietly reveal from where they came. We follow old-world farming and winemaking techniques and our boutique vineyard is purposely geared to produce tiny yields of highly flavoured fruit. We use minimal intervention during the winemaking process, and let the fruit expose its story within the glass.
There are only two of us, and we personally handcraft all of our wines in extremely small lots. Production is low in quantity, and large on quality. Wine is our artistry; one of our greatest creative pleasures. You will discover our attention to detail and exclusive signature within each and every wine; flavours that are deeply intense, velvety rich, and thoroughly elegant. We strive to make the kind of wines that leave an enduring memory on your palate.
