We Olive was born from passion; a passion for locally sourced, healthy, delicious, artisan extra virgin olive oil! It was nearly a decade ago when we first noticed an increase in the consumer’s demand for this type of product; so, coupled with this knowledge and our own passion, the first We Olive store was opened.
Opening that first store was a dream come true for us. We had officially created a place where local growers, chefs, and guests alike could experience, learn about, and purchase the California-made olive oil we’d come to know and love. Of course, having a wonderful product isn’t the only key to success. From the very beginning we’ve been committed to exceeding our guests’ expectations in product quality, customer service, and providing an unparalleled educational & culinary experience. Wild Coyote Winery is famously known as the House-Of-Reds (big, bold, non-filtered) wines. Limited estate grown, dry farmed, and producing; Zinfandel, Merlot, Syrah, Malbec, Mourvedre, Tannat, Tempranillo, Rose’-of-Syrah, Late Harvest Syrah, and Zinfandel Port.
Wild Coyote Estate Winery is a true wine country retreat, also home to a unique Santa Fe style Bed & Breakfast (B&B) right in the heart of the Paso Robles West-side wine region of Central Coast, California. Also newly added, a guest house vacation rental (House-Of-Zin) for families and larger groups. We can also hold private events, weddings, and corporate functions.

Established in 1995
Our philosophy is to be a farmer first, and then a winemaker. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as “full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling, all from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our (15) acres Westside Paso Robles grapes, and less than 2,000 cases in total production annually, then so be it. We are a tiny winery located on a Westside hilltop in Paso Robles. We craft wines that are a fascinating marriage of power and elegance. We take what comes from the vineyard and keep it simple and pure. Our grapes are always encouraged to speak for themselves, and if you treat them with the utmost of care, they will always quietly reveal from where they came. We follow old-world farming and winemaking techniques and our boutique vineyard is purposely geared to produce tiny yields of highly flavoured fruit. We use minimal intervention during the winemaking process, and let the fruit expose its story within the glass.
There are only two of us, and we personally handcraft all of our wines in extremely small lots. Production is low in quantity, and large on quality. Wine is our artistry; one of our greatest creative pleasures. You will discover our attention to detail and exclusive signature within each and every wine; flavours that are deeply intense, velvety rich, and thoroughly elegant. We strive to make the kind of wines that leave an enduring memory on your palate.

Ray and Pam Derby moved to the Central Coast area in the early 1990’s with the intention of retiring. In 1998, they purchased their first vineyard property, now known as Derbyshire Vineyard and their thoughts of retirement were replaced by the inspiration of being a part of the wine world. In the years following, Ray next acquired the historic Laura’s Vineyard (in east Paso) and then the Westside property, now called the Derby Vineyard. Needless to say, their plans of retirement never came to fruition.
After experiencing nearly a decade as a grape grower, the potential strengths of each property became apparent and in 2008, Ray and Pam launched Derby Wine Estates. They are extremely selective in terms of what goes into the bottle under the Derby label. The commitment to the land is appreciable, with only 20 hand-selected acres being used to provide fruit for their own brand. Grapes from the remainder (some 90%of their total acreage) are sold to some of the finest wine producers in California.
Our story
A journey into the coastal town of Cambria, CA opened the eyes of my father, a young immigrant, to a better life for his family. Sure enough, my father was right. A whole world was out there for his children to embrace.
Bodega is the Spaniard term for a winery or cellar. Considering my Hispanic heritage and passion for Spanish wines, the brand name seemed a natural fit.
My wine journey started as a waiter in Paso Robles, CA. There I was exposed to many great wine producers. Several became friends and eventually opened their doors to my learning desires. I started as a Cellar Rat, and moved on to learn the many different aspects of the wine industry. My enthusiasm for producing great wines brought me and my wife to the development of our own brand, Bodega de Edgar, in 2007.
Starting at just 250 cases, Bodega de Edgar is now approaching 3,500 cases with the 2018 vintage. As always, my focus is on sourcing the highest quality fruit to produce the best wines, while still maintaining an affordable price point.

The Paso Robles Historical Society is a non-profit organization that seeks and encourages the development of archives and serves as a repository for records and other materials. Four Lanterns resides on 35 acres on the west side of Paso Robles in the formidable Willow Creek AVA. This area, renowned for hot days, cool nights and soil riddled with calcareous stone, provides a perfect environment for making exceptional wines. Jackie’s Vineyard, located in the Templeton Gap AVA, is the location where their Bordeaux varietals grow.
Specializing in wine varietals native to France’s Rhone Valley & Bordeaux regions, Four Lanterns focuses on making estate wines, capitalizing on the natural strengths of their land. The resulting wines are beautifully complex, balanced, and wonderful to drink.
