OUR WINEMAKING PHILOSOPHY
At JUSTIN, we combine traditional Old World methods—like hand-harvesting and small-barrel aging in French oak—with New World technology. For example: the “Air Knife,” an ingenious process invented by our winemakers, boosts grape quality and efficiency.
Once the grapes are harvested, our winemakers—some of the best in the business—gather to sort, select, age, taste, blend and decide what goes into every bottle.
As you enter The Hunt Cellars Tasting room, the fun wine experience begins, as you are greeted with either live music or our white grand player piano. Stroll up to our Cabernet Bar, where our warm and friendly staff are eager to lead you through a lighthearted and fun sampling of our wines. You may also choose to sip your wines on our spacious 1200 foot veranda, smoke your favorite cigar under our pavilion or simply stroll through our lush inviting landscaped lawns. We want you and your guest to simply have a wonderful time at Hunt Cellars and bring your friends and family back on your next visit to the Paso Robles Wine Country.
As you drive along Highway 46 on the west side of Paso Robles you can’t miss the impressive stone buildings of Niner Wine Estates. Adjacent to them is a group of old oaks that rest in the depression between two hillsides, forming the shape of a heart. This is the vineyard known as Heart Hill and it was something to do with the heart that begins our story of Niner Wine Estates. The Rotta tasting room and winery is located in the Templeton hills, and features a unique blend of history and modern winemaking technology. One thing that’s definitely staying is the old redwood sign with “Rotta Winery” neatly hand stenciled in white paint. “I painted that sign when I was ten years old,” remembered Giubbini.
Wild Coyote Winery is famously known as the House-Of-Reds (big, bold, non-filtered) wines. Limited estate grown, dry farmed, and producing; Zinfandel, Merlot, Syrah, Malbec, Mourvedre, Tannat, Tempranillo, Rose’-of-Syrah, Late Harvest Syrah, and Zinfandel Port.
Wild Coyote Estate Winery is a true wine country retreat, also home to a unique Santa Fe style Bed & Breakfast (B&B) right in the heart of the Paso Robles West-side wine region of Central Coast, California. Also newly added, a guest house vacation rental (House-Of-Zin) for families and larger groups. We can also hold private events, weddings, and corporate functions.

Established in 1995
Our philosophy is to be a farmer first, and then a winemaker. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as “full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling, all from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our (15) acres Westside Paso Robles grapes, and less than 2,000 cases in total production annually, then so be it. Four Lanterns resides on 35 acres on the west side of Paso Robles in the formidable Willow Creek AVA. This area, renowned for hot days, cool nights and soil riddled with calcareous stone, provides a perfect environment for making exceptional wines. Jackie’s Vineyard, located in the Templeton Gap AVA, is the location where their Bordeaux varietals grow.
Specializing in wine varietals native to France’s Rhone Valley & Bordeaux regions, Four Lanterns focuses on making estate wines, capitalizing on the natural strengths of their land. The resulting wines are beautifully complex, balanced, and wonderful to drink.

Our story
A journey into the coastal town of Cambria, CA opened the eyes of my father, a young immigrant, to a better life for his family. Sure enough, my father was right. A whole world was out there for his children to embrace.
Bodega is the Spaniard term for a winery or cellar. Considering my Hispanic heritage and passion for Spanish wines, the brand name seemed a natural fit.
My wine journey started as a waiter in Paso Robles, CA. There I was exposed to many great wine producers. Several became friends and eventually opened their doors to my learning desires. I started as a Cellar Rat, and moved on to learn the many different aspects of the wine industry. My enthusiasm for producing great wines brought me and my wife to the development of our own brand, Bodega de Edgar, in 2007.
Starting at just 250 cases, Bodega de Edgar is now approaching 3,500 cases with the 2018 vintage. As always, my focus is on sourcing the highest quality fruit to produce the best wines, while still maintaining an affordable price point.

The Hope family arrived in Paso Robles in 1978 in search of land and new opportunity. Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually. Living the Dream
Pinot Noir is the driving passion of Marc Goldberg and Maggie D’Ambrosia, husband and wife owners of Windward Vineyard. Windward Vineyard is dedicated exclusively to producing Burgundian style Pinot Noir. To make the “Great American Pinot Noir,” one that rivals those produced in Burgundy, is the couple’s passion.
Marc and Maggie purchased and planted the vineyard in 1989 based upon the terroir and microclimate of the Paso Robles Westside. The combination of the cooling Pacific breezes, the calcareous soil and the 50 degree daily drop in temperature produce exemplary Pinot Noir.
With the Burgundian French term, “Monopole” vision of total control over both the vineyard and the winemaking, the 15-acre vineyard is planted to four notable French clones.
Windward Vineyard is dedicated to putting Paso Robles’ Pinot Noir back on the map, following in the footsteps of two significant figures in California wine history. In the late 1960’s, consultant Andre Tchelistcheff supervised the Paso Robles Hoffman Mountain Ranch property of Dr. Stanley Hoffman. In the 1970’s, Hoffman’s Pinot Noirs gained worldwide recognition, and were drinking well over 20 years later.
Since the 1993 debut in 1995, each of Windward’s SOLD OUT vintages have achieved inspiring acclaim, particularly within the community of wine aficionados who appreciate the layered complexity of Burgundian styled Pinot Noir. Marc explains. “We knew we could count on the vineyard to produce formidable fruit. It is living up to our expectations as it matures and continues to develop layered complexity.”
In Italian, Fratelli Perata means Perata Brothers. Maternal Grandparents Brothers, Gino and Joe Perata, rekindled the winemaking history of their father, grandfather and great-uncle when they established their winery using grapes grown on their 31 acre vineyard. Sons of Italian immigrants, Gino and Joe learned winemaking at the knees of their father and great-uncle who produced hundreds of gallons of wine for family and friends while living in Camarillo located in Ventura County, California. Gino and Joe were taught from the very beginning about the need for hands-on work to produce top quality wines. THE ASUNCION RIDGE EXPERIENCE
The journey began when Winemaker, Philip Krumal and Entrepreneur, Michael Dilsaver met in a wine appreciation class in 1995. Their love of fine wine, great food and inspiring friendships lead to the ultimate dream of “living the wine country dream.” Their first Pinot Noir vineyard was planted in 2002 in the Santa Lucia Mountains overlooking Morro Bay, thus starting the Asuncion Ridge story. Philip and Michael’s philosophy is a simple one…”wine begins in the vineyard.” To this end, a watchful eye is given to every step of the process from “the vineyard to the bottle.”

Kiler Ridge Olive Farm is a 58-acre family farm in the coastal hills of central California, just minutes from downtown Paso Robles. Our central coast climate and chalky soil are ideal for olives. We use sustainable farming practices, and currently maintain 2500 olive trees — varieties originating from Italy and Sicily.
The farm’s first year of olive oil production was 2010, and that year, as well as each following year, our Kiler Ridge Extra Virgin Olive Oils have won medals in important olive oil competitions, including the Los Angeles International Olive Oil Competition, the Der Feinschmecker international competition in Germany, and the California Olive Oil Council competition.
During October, November and December, we are harvesting our olives and releasing limited quantities of our extremely fresh Olio Nuovo olives oils. In February through April, we release our new season’s clarified and Certified Extra Virgin Olive Oils.
