We craft wines that represent a stylistic bridge between the Old and New worlds, capturing the finesse associated with European wines while celebrating the bold natural flavors of our estate vineyards in Paso Robles.

Our vineyards are located six miles north of Paso Robles, CA, near the eastern slope of the Santa Lucia Mountains. The mainly southern-facing, rolling hill vineyards are planted on well-drained, moderately deep, silty clay loam soils. Hot summer days and cool nights provide ideal growing conditions for the vines. We Olive was born from passion; a passion for locally sourced, healthy, delicious, artisan extra virgin olive oil! It was nearly a decade ago when we first noticed an increase in the consumer’s demand for this type of product; so, coupled with this knowledge and our own passion, the first We Olive store was opened.

Opening that first store was a dream come true for us. We had officially created a place where local growers, chefs, and guests alike could experience, learn about, and purchase the California-made olive oil we’d come to know and love. Of course, having a wonderful product isn’t the only key to success. From the very beginning we’ve been committed to exceeding our guests’ expectations in product quality, customer service, and providing an unparalleled educational & culinary experience. The combination of our educational “Olive Oil Experience” and a tasting-oriented wine bar make We Olive a unique destination for foodies everywhere.

When a guest walks through our doors, it is our goal to ignite the flame of culinary imagination within them; to instill the excitement and celebration of fresh, healthy foods made with ingredients from local artisans. It is our passion, our dedication, and the unique experience we provide that keeps guests coming back day after day.

Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.

Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. Rocky Creek Cellars is a small, family owned and operated winery. We are located on the southern slope of York Mountain and bordered by Rocky Creek. Sarzotti Winery and Vineyard serves as the Sarzotti family’s vehicle for sharing what they love to do—make wine. The winery is owned and run by the Sarzotti family, and they see it as a way to do what their family has been doing for generations: to make wine that can be enjoyed with friends and family.

Jim Sarzotti and his wife Cheryl as well as their son James and his wife Jenne, all live and work on the Sarzotti Winery and Vineyards property in beautiful Templeton, CA. James and Jenne’s children also live on the property. The Sarzottis have farming in their blood—fifteen years ago they relocated to Paso Robles from Southern California at James’ suggestion. James knew that his father had always loved to grow grapes and make wine, and saw in Paso Robles an opportunity to do this together as a family.

Our Paso Robles wine grapes are grown to promote intense, varietal flavors that can then be sculpted in the cellar into a final artistic statement. The rich, concentrated wines of Sculpterra are the result of combining exceptional fruit from the winery’s estate vineyards and select Paso Robles vineyards with meticulous hand-crafted winemaking. Gentle handling, using traditional gravity methods ensures that the integrity of the wines stay intact. Sculpterra wines are aged an average of 12 to 18 months in American, French and Hungarian oak.

A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years.
