Our philosophy is to be a farmer first, and then a winemaker. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as “full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling, all from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our (15) acres Westside Paso Robles grapes, and less than 2,000 cases in total production annually, then so be it. As a small family owned vineyard and winery, we consider ourselves fortunate to be part of a “New World” of wine exploration. Established in 1991…Dunning Vineyards is family owned and operated. Located on the Westside of Paso Robles in the “Willow Creek” AVA District. We are well known for producing Premium Quality highly rated Estate wines featuring Estate Zinfandel. Cabernet Sauvignon, Cabernet Franc, Meritage, Pinot Noir, Chardonnay, Petite Sirah and Grenache.
Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.
Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually. August Ridge was established by John Backer and Jill Zamborelli Backer in the spring of 2001 with the purchase of 40 acres of rolling hills in Creston. From the beginning their goal was to produce wines that combine the robust styling of the best California wines with the restrained elegance of the classic wines from northern and central Italy. Their passion for the project comes from a love of cooking, eating and sharing meals with friends which leads directly to August Ridge wine style. This dream is a natural extension of both the Backer and Zamborelli families. John’s family has been growing grapes for four generations dating back to the 1800’s while Jill’s family brings the robust Italian food and traditions from a small town just outside of Rome, Italy.
As you enter The Hunt Cellars Tasting room, the fun wine experience begins, as you are greeted with either live music or our white grand player piano. Stroll up to our Cabernet Bar, where our warm and friendly staff are eager to lead you through a lighthearted and fun sampling of our wines. You may also choose to sip your wines on our spacious 1200 foot veranda, smoke your favorite cigar under our pavilion or simply stroll through our lush inviting landscaped lawns. We want you and your guest to simply have a wonderful time at Hunt Cellars and bring your friends and family back on your next visit to the Paso Robles Wine Country.
The genesis of the wine story for Pear Valley began in the late 60’s when owner Tom Maas was stationed on an army base in Germany…in the midst of a vineyard. Here he learned to love both wine and the vineyard. Decades later, when the kids were grown and responsibilities waned, he was free to pursue his dream of owning and living in a vineyard. It started with 20 acres in 1999 and now Tom and Kathleen own 113 acres where they dedicate their energy and resources to providing the best environment for growing premium grapes. The vineyards are operated with sustainable farming practices to ensure that the best fruit possible will still be grown there when their grandchildren operate the farm.
The next phase of the dream began in the Spring of 2008 when they broke ground on a 14,000 winery and 5,000 square foot tasting room. Continuing the dedication to providing the best environment possible, the winery and tasting room were designed in partnership with PG&E through their “Savings By Design” program to design buildings that are energy efficient and environmentally sound.
In August 2012 Pear Valley officially achieved Sustainability in Practice (SIP) Vineyard Certification. As native New Orleanians, Tealy and Greg grew up in a culture of great jazz and good food. French wine was the principal accompliment to New Orleans cuisine at the time. Living in Europe during the 70’s and 80’s, enhanced our wine experience and appreciation of European wines. In the 90’s we returned to California and developed a greater appreciation of California wines.
After working for an international company for thirty years, we decided to start a second career dedicated to growing grapes and making great wines at affordable prices that enhance the culinary experience. After searching for a vineyard, we settled on the Central Coast of California in Paso Robles in 2007. It is still a place where the vineyard farmer and the wine maker are the same person and winemaking starts in the vineyard.
At ONX we focus on farming our crops with the understanding that the fruits of our labors will be realized in a glass of wine… your glass hopefully! There is a French term, elevage, which is applied to wine and it translates to “the educating or upbringing” of wine like parents do with their children. We like to extend that notion into the vineyard and believe that we can train the vines into producing the best possible fruit for wine production.
Our winegrowing goal each year is to raise concentrated and highly expressive fruit. We balance our crop to allow the vines to focus their energy on a limited number of clusters. The vine canopy is manicured to allow dappled sunlight penetration and air movement within the vine canopy. We employ a variety of trellis approaches that match our rootstock, scion, and soil combinations.
Unhindered by convention, the ONX Winemaking Team strives to create balanced wines that reflect both the place the grapes were grown and the vintage in which they were born. From rule breaking to blind blending, each vintage of ONX Wines is completely different, yet delightfully cohesive.
