We Olive was born from passion; a passion for locally sourced, healthy, delicious, artisan extra virgin olive oil! It was nearly a decade ago when we first noticed an increase in the consumer’s demand for this type of product; so, coupled with this knowledge and our own passion, the first We Olive store was opened.
Opening that first store was a dream come true for us. We had officially created a place where local growers, chefs, and guests alike could experience, learn about, and purchase the California-made olive oil we’d come to know and love. Of course, having a wonderful product isn’t the only key to success. From the very beginning we’ve been committed to exceeding our guests’ expectations in product quality, customer service, and providing an unparalleled educational & culinary experience. The combination of our educational “Olive Oil Experience” and a tasting-oriented wine bar make We Olive a unique destination for foodies everywhere.
When a guest walks through our doors, it is our goal to ignite the flame of culinary imagination within them; to instill the excitement and celebration of fresh, healthy foods made with ingredients from local artisans. As you drive along Highway 46 on the west side of Paso Robles you can’t miss the impressive stone buildings of Niner Wine Estates. Adjacent to them is a group of old oaks that rest in the depression between two hillsides, forming the shape of a heart. This is the vineyard known as Heart Hill and it was something to do with the heart that begins our story of Niner Wine Estates. The Rava’s own more than 1,200 acres of premium vineyards that span from the foothills of the Santa Lucia Range in Monterey County to the Rava Estate in the heart of Paso Robles Wine Country. Owner, Chad Rava oversees and manages all vineyard operations, new plantings and harvest decisions. By having a hand in all production processes, the Rava’s are able to focus on terroir driven quality and their signature sparkling wines.
Paso Robles Vineyards
The estate vineyards start with a 505 continuous acre property, located in the El Pomar District, one of 11 sub appellations in the Paso Robles AVA. Once home to an Arabian Horse Ranch, Rava Estate was established in 2016 by Chad and Lauren Rava.
Located adjacent to Rava Winery, the estate vineyard is planted to 15 signature varietals from Italian and French origins. You will find Grenache, Teroldego, Nebbiolo, Negro Amaro, Tempranillo, Cabernet Sauvignon, Malbec, Petit Verdot, Petite Sirah, Primitivo, Pinot Blanc, Pinot Meunier, Calabrese, Tannat and Merlot.
The vineyard features warm daytime temperatures and cool marine breezes late in the day that flow through the Templeton Gap. The soils are a mix of loam, clay and limestone, providing excellent drainage and ideal growing conditions.

Kula Vineyards is a small, family-owned vineyard & winery featuring award-winning, estate wines. Kula means “Gold” in Hawaiian and you’ll find it everywhere from the golden hills surrounding the vineyard to their Golden Retrievers. Norman Vineyards, established in 1971, was one of the original vineyards to be planted in Paso Robles, on a cool stretch of the west side on Vineyard Drive, an area now bursting with vineyards and wineries. The late wine pioneer and “Godfather of Zin” Art Norman and his wife Lei grew their vines and business from the ground up, researching and fine-tuning as they went to create the best quality grapes possible.
After twenty years of premium grape growing, they decided to start their own winery in1992. Though they had envisioned a small operation, producing perhaps a few thousand cases of wine per year, the instant success and acclaim they achieved led them to grow. Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually.
