He received his Bachelor of Science degree in accounting from the University of Denver, and his Law Degree Juris Doctor from the San Joaquin College of Law. Meet owner Joel Tolbert
Joel is a third generation craftsman from the Central Coast. He has always enjoyed painting, helping his father’s painting company during the summer months from the age of 10 years old. He even paved his way through school by working as a painter. During all these years of painting, he’s had the opportunity to research and apply most every method of paint application. From full exterior houses to the finest furniture and cabinetry, Joel and his team of painters know their stuff.

Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually. We are a tiny winery located on a Westside hilltop in Paso Robles. We craft wines that are a fascinating marriage of power and elegance. We take what comes from the vineyard and keep it simple and pure. Our grapes are always encouraged to speak for themselves, and if you treat them with the utmost of care, they will always quietly reveal from where they came. We follow old-world farming and winemaking techniques and our boutique vineyard is purposely geared to produce tiny yields of highly flavoured fruit. We use minimal intervention during the winemaking process, and let the fruit expose its story within the glass.
There are only two of us, and we personally handcraft all of our wines in extremely small lots. Production is low in quantity, and large on quality. Wine is our artistry; one of our greatest creative pleasures. You will discover our attention to detail and exclusive signature within each and every wine; flavours that are deeply intense, velvety rich, and thoroughly elegant. We strive to make the kind of wines that leave an enduring memory on your palate.

Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.
Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. As you drive along Highway 46 on the west side of Paso Robles you can’t miss the impressive stone buildings of Niner Wine Estates. Adjacent to them is a group of old oaks that rest in the depression between two hillsides, forming the shape of a heart.
