THE ASUNCION RIDGE EXPERIENCE
The journey began when Winemaker, Philip Krumal and Entrepreneur, Michael Dilsaver met in a wine appreciation class in 1995. Their love of fine wine, great food and inspiring friendships lead to the ultimate dream of “living the wine country dream.” Their first Pinot Noir vineyard was planted in 2002 in the Santa Lucia Mountains overlooking Morro Bay, thus starting the Asuncion Ridge story. Philip and Michael’s philosophy is a simple one…”wine begins in the vineyard.” To this end, a watchful eye is given to every step of the process from “the vineyard to the bottle.”

As you drive along Highway 46 on the west side of Paso Robles you can’t miss the impressive stone buildings of Niner Wine Estates. Adjacent to them is a group of old oaks that rest in the depression between two hillsides, forming the shape of a heart. This is the vineyard known as Heart Hill and it was something to do with the heart that begins our story of Niner Wine Estates. In Italian, Fratelli Perata means Perata Brothers. Maternal Grandparents Brothers, Gino and Joe Perata, rekindled the winemaking history of their father, grandfather and great-uncle when they established their winery using grapes grown on their 31 acre vineyard. Sons of Italian immigrants, Gino and Joe learned winemaking at the knees of their father and great-uncle who produced hundreds of gallons of wine for family and friends while living in Camarillo located in Ventura County, California. Seven Angels Cellars is a family owned, boutique winery located in Templeton, CA. We began making wine in 2009 with a small production of Petite Sirah. Since then we have increased production to around 3000 cases per year. Greg Martin is the owner/winemaker and Pamela Martin is the other owner and handles social media, food pairings, wine club and club events and the website. The story behind the name came from our passion for family. We have seven children in our blended family, our 7 angels.
We both grew up loving wine. Greg grew up in a rural area of California with neighbors who grew wine grapes. He spent a lot of time learning about the entire process from the vine to the bottle from his patient neighbor. He continued his interest in wine as a US Coast Guard when he was stationed in the bay area and had easy access to the multitude of wineries in Sonoma and Napa. Pamela comes from a family of foodies and wine enthusiasts. She took courses in college in winemaking and learned the biology aspect of wine. She worked in catering and on TV as a home economist for a cooking show. Pairing food and wine to create an interesting and delightful balance in a meal has become an obsession for her.
We married in 2008 and started making wine the following year. We specialize in Rhone blends as well as single varietals. Greg has his eyes, hands in every aspect of the process from the field to the bottle. Pamela has the palate and the nose and is instrumental in the blending.
We participate in many non-profit and charity events as our way of giving back. We are involved with Precious Life Shelter in Los Alamitos, a shelter for homeless pregnant women and Goals for Life, and NFL program for troubled youth. We are the official wine sponsor for the Congressional Cup held annually at the Long Beach Yacht Club. We also sponsor the Wooden Boat Festival in Newport Beach each year.
Many of our wines have been recognized by Wine Enthusiast with ratings in the 90’s. We’ve also received numerous gold medals at California and International wine competitions. This year we were awarded a gold medal from the mid-state fair for our 2015 Pinot Noir and a gold medal from the Orange County Wine Competition for our 2015 Tempranillo.
We believe in the “less is best” approach to winemaking. Less manipulation and more natural methods of making our wine. Greg likes to play with using different kinds of oak in our barrel program. Our wines are food friendly, approachable in both flavor and price point. We’d love to share with you more about our methodology, including, why we keep our price point where it is and how we see Seven Angels integrated on an evolved, noteworthy, wine list.
As you enter The Hunt Cellars Tasting room, the fun wine experience begins, as you are greeted with either live music or our white grand player piano. Stroll up to our Cabernet Bar, where our warm and friendly staff are eager to lead you through a lighthearted and fun sampling of our wines. You may also choose to sip your wines on our spacious 1200 foot veranda, smoke your favorite cigar under our pavilion or simply stroll through our lush inviting landscaped lawns. LXV’s winery is located in the exclusive Willow Creek area of the westside of Paso Robles near Linne Colado and Saxum. The Mittals currently source their fruit from other vineyards nearby, but have land set aside for planting some day.
The new tasting room is located at 1306-B Pine St. at the corner of 13th and Pine streets in downtown Paso Robles. Wild Coyote Estate Winery is a true wine country retreat, also home to a unique Santa Fe style Bed & Breakfast (B&B) right in the heart of the Paso Robles West-side wine region of Central Coast, California. Also newly added, a guest house vacation rental (House-Of-Zin) for families and larger groups. We can also hold private events, weddings, and corporate functions.

Our philosophy is to be a farmer first, and then a winemaker. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as “full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling, all from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our (15) acres Westside Paso Robles grapes, and less than 2,000 cases in total production annually, then so be it. Bovino Vineyards and Winery is located in beautiful Templeton, California. Our estate vineyards are centrally situated in the Templeton Gap which is nestled between the Paso Robles Willow Creek and the El Pomar Districts. The Templeton Gap consists of a series of mountain passes created by rivers and creeks in the Santa Lucia Range, through which marine air flows into the region.
The Templeton Gap is the coolest climate of the Paso Robles sub-appellations and receives approximately 20 inches of precipitation per year. The water gap allows marine influences to enter the region which moderate the daily temperatures and increase the amount of time that it takes for grapes to ripen. The elevations in the area range from 700 to 1,800 feet above sea level with the majority of the wineries located between 800 and 940 feet.
The soils were created by alluvium of the Monterey Formation and are largely made up of silty and clay loams. There are some older soils produced from the Paso Robles Formation that are more cemented and shaly. Grapes produced in this region include Cabernet Sauvignon, Carignane, Charbono, Chardonnay, Grenache, Merlot, Petite Sirah, Pinot Gris, Pinot Noir, Primitivo, Sangiovese, Syrah, Tempranillo, Viognier and Zinfandel.
