We are a tiny winery located on a Westside hilltop in Paso Robles. We craft wines that are a fascinating marriage of power and elegance. We take what comes from the vineyard and keep it simple and pure. Our grapes are always encouraged to speak for themselves, and if you treat them with the utmost of care, they will always quietly reveal from where they came. We follow old-world farming and winemaking techniques and our boutique vineyard is purposely geared to produce tiny yields of highly flavoured fruit. We use minimal intervention during the winemaking process, and let the fruit expose its story within the glass.

There are only two of us, and we personally handcraft all of our wines in extremely small lots. Production is low in quantity, and large on quality. Wine is our artistry; one of our greatest creative pleasures. You will discover our attention to detail and exclusive signature within each and every wine; flavours that are deeply intense, velvety rich, and thoroughly elegant. We strive to make the kind of wines that leave an enduring memory on your palate.

Nestled in the heart of Edna Valley, overlooking rows of vineyards and a 40-mile stretch of the Santa Lucia mountain range is Autry Cellars. Owner and artisan winemaker Steve Autry and his tasting room staff pour wine varietals, brandy, and grappa borne from some of the best grapes selected from across the region, along with his signature apple brandy.

Autry Cellars’ informal, unpretentious tasting room is, “decorated in early American warehouse” style, jokes Autry. However, don’t be deceived by the modest décor. In this tasting room visitors can experience superb wine varietals ranging from best selling Petite Sirah to Malbec and Viognier. In addition, you can taste gold medal best-in-class grappa and silver medal winning American oak and Hungarian oak brandies, awarded by the California Mid-State Fair.

With over 18 years of winemaking experience, Autry became a commercial winemaker 10 years ago and a fully licensed brandy distiller in 2012. A visit to Autry Cellars is about discovery. He says people who visit his tasting room, “come for the wine and discover the brandy.” At Autry Cellars, visitors gain access to impressive wines and brandies that are available exclusively in the tasting room. The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.

Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.

Norman Vineyards, established in 1971, was one of the original vineyards to be planted in Paso Robles, on a cool stretch of the west side on Vineyard Drive, an area now bursting with vineyards and wineries. The late wine pioneer and “Godfather of Zin” Art Norman and his wife Lei grew their vines and business from the ground up, researching and fine-tuning as they went to create the best quality grapes possible.
After twenty years of premium grape growing, they decided to start their own winery in1992. Though they had envisioned a small operation, producing perhaps a few thousand cases of wine per year, the instant success and acclaim they achieved led them to grow. Founded in 2003, Line Shack Winery was the realization of over two decades of Balentine family winemaking experience. With this venture, owner/winemaker team Bob and Daphne Balentine set out to produce affordable, world-class wines from California’s Central Coast, particularly from the new San Antonio Valley AVA in Southern Monterey County. The San Antonio Valley is the site of California’s second mission, Mission San Antonio, where some of the first wine grapes were ever planted in California. This region provides warm days followed by cool nights, enabling fruit to achieve extended hang time and maximize its true varietal characteristics.

Our vineyards are located in the San Antonio Valley, a 1200 foot high Mountain Valley in the heart of the Santa Lucia mountain range and several miles inland from the Pacific Ocean on the Central Coast of California. The region is quickly becoming renowned for the excellent warm-climate Bourdeaux and Rhone grape varieties. The wines produced are intensely flavored, full-bodied reds and whites of exceptional character.

To round out our portfolio, we source small amounts of Pinot Noir and Chardonnay fruit from the cooler Santa Lucia Highlands, also located in Monterey County. All of our wines are made in an approachable style that is both respectful to the varietal and representative of the California South Coast terroir. The history behind Donatoni Winery is apparent to any visitor to this Westside Paso Robles winery. Memorabilia and photographs from the owners’ history in the airline industry cover the walls and adorn the tasting bar. And, owners Hank Donatoni and Sandi Baird are happy to elaborate on the story that the tasting room theme tells. Though they are retired now, Hank and Sandi’s connection to the airline business is still strong. Many of their friends were once co-workers, and even members of the aviation community they have never met find their way to Donatoni through their shared histories. Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.

Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. In 1982 the Eberle Winery production facility and tasting room were open for business and in 1994 Gary expanded underground, building the first wine caves in Paso Robles. Now, over 30 years later, Gary Eberle and his wife Marcy still greet guests daily with complimentary wine tastings, public tours of the production facility and 16,000 square feet of underground caves. They also play host to a variety of delicious and entertaining events held at the winery throughout the year.

They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.

Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.

Opolo’s estate vineyards were established from 1994-1996, with sites on both the west and east side of Paso Robles. The topographically diverse, coastal landscape of the westside vineyards provides for an intense and unique flavor profile. The heat and dryness of the east side vineyard make it an ideal microclimate for growing Bordeaux varietals. Home to a wide range of varietals, the estate vineyards help allow the team at Opolo to create many unique single varietals as well as award winning blends.

Most important in making high quality wine is starting with high quality grapes. Opolo’s vineyard team carefully monitors each lot of grapes throughout the season in order to produce the highest quality fruit possible. From taking leaf, petiole, and soil samples, to monitoring water uptake in the vines, all aspects of viticulture is carefully notated and examined with the intent of producing only high quality fruit for our winery. The entire Opolo production team works together every year to provide the best quality product possible.

SUSTAINABILITY

At Opolo we believe a strong, cooperative relationship with the land and our environment is crucial.  We practice sustainable methods in both the winery and vineyard operations in order to preserve our environment, water and local wildlife. Opolo is a “SIP” Certified operation as well as certified organic by “CCOF” in our 64 acre walnut orchard.  We continue to be great stewards of the land and invite you to come to our vineyards and see our operations!

Row Crops

We grow barley between the planting rows in order to hold moisture in place and prevent erosion during the winter rains (when there is rain) and instead of cutting and removing the barley, we simply mow it in place to add beneficial nutrients back to the soil.

Owl Boxes

Owl boxes make great homes for nesting owls, as well as provide a natural rodent and pest control in the vineyard.

Constructed Wetlands

Water is recycled at Opolo through our two-tank wetlands’ system, which uses marine plants to filter the water so it can be reused in the vineyard. The wetlands also provide a habitat for beneficial microorganisms, insects, and birds.

Seven Angels Cellars is a family owned, boutique winery located in Templeton, CA.  We began making wine in 2009 with a small production of Petite Sirah.  Since then we have increased production to around 3000 cases per year.  Greg Martin is the owner/winemaker and Pamela Martin is the other owner and handles social media, food pairings, wine club and club events and the website.  The story behind the name came from our passion for family.  We have seven children in our blended family, our 7 angels.

We both grew up loving wine.  Greg grew up in a rural area of California with neighbors who grew wine grapes.  He spent a lot of time learning about the entire process from the vine to the bottle from his patient neighbor.  He continued his interest in wine as a US Coast Guard when he was stationed in the bay area and had easy access to the multitude of wineries in Sonoma and Napa.  Pamela comes from a family of foodies and wine enthusiasts.  She took courses in college in winemaking and learned the biology aspect of wine.  She worked in catering and on TV as a home economist for a cooking show.  Pairing food and wine to create an interesting and delightful balance in a meal has become an obsession for her.

We married in 2008 and started making wine the following year.  We specialize in Rhone blends as well as single varietals.  Greg has his eyes, hands in every aspect of the process from the field to the bottle.  Pamela has the palate and the nose and is instrumental in the blending.

We participate in many non-profit and charity events as our way of giving back.  We are involved with Precious Life Shelter in Los Alamitos, a shelter for homeless pregnant women and Goals for Life, and NFL program for troubled youth.  We are the official wine sponsor for the Congressional Cup held annually at the Long Beach Yacht Club.  We also sponsor the Wooden Boat Festival in Newport Beach each year.

Many of our wines have been recognized by Wine Enthusiast with ratings in the 90’s.  We’ve also received numerous gold medals at California and International wine competitions.  This year we were awarded a gold medal from the mid-state fair for our 2015 Pinot Noir and a gold medal from the Orange County Wine Competition for our 2015 Tempranillo.

We believe in the “less is best” approach to winemaking.  Less manipulation and more natural methods of making our wine.  Greg likes to play with using different kinds of oak in our barrel program.  Our wines are food friendly, approachable in both flavor and price point.  We’d love to share with you more about our methodology, including, why we keep our price point where it is and how we see Seven Angels integrated on an evolved, noteworthy, wine list.
