At ONX we focus on farming our crops with the understanding that the fruits of our labors will be realized in a glass of wine… your glass hopefully! There is a French term, elevage, which is applied to wine and it translates to “the educating or upbringing” of wine like parents do with their children. We like to extend that notion into the vineyard and believe that we can train the vines into producing the best possible fruit for wine production.
Our winegrowing goal each year is to raise concentrated and highly expressive fruit. We balance our crop to allow the vines to focus their energy on a limited number of clusters. The vine canopy is manicured to allow dappled sunlight penetration and air movement within the vine canopy. We employ a variety of trellis approaches that match our rootstock, scion, and soil combinations.
Unhindered by convention, the ONX Winemaking Team strives to create balanced wines that reflect both the place the grapes were grown and the vintage in which they were born. From rule breaking to blind blending, each vintage of ONX Wines is completely different, yet delightfully cohesive.
Nestled in the heart of Edna Valley, overlooking rows of vineyards and a 40-mile stretch of the Santa Lucia mountain range is Autry Cellars. Owner and artisan winemaker Steve Autry and his tasting room staff pour wine varietals, brandy, and grappa borne from some of the best grapes selected from across the region, along with his signature apple brandy.
Autry Cellars’ informal, unpretentious tasting room is, “decorated in early American warehouse” style, jokes Autry. However, don’t be deceived by the modest décor. In this tasting room visitors can experience superb wine varietals ranging from best selling Petite Sirah to Malbec and Viognier. In addition, you can taste gold medal best-in-class grappa and silver medal winning American oak and Hungarian oak brandies, awarded by the California Mid-State Fair.
With over 18 years of winemaking experience, Autry became a commercial winemaker 10 years ago and a fully licensed brandy distiller in 2012. A visit to Autry Cellars is about discovery. He says people who visit his tasting room, “come for the wine and discover the brandy.” At Autry Cellars, visitors gain access to impressive wines and brandies that are available exclusively in the tasting room. Every wine is unique, and each is produced only in small quantities.

Rocky Creek Cellars is a small, family owned and operated winery. We are located on the southern slope of York Mountain and bordered by Rocky Creek. Norman Vineyards, established in 1971, was one of the original vineyards to be planted in Paso Robles, on a cool stretch of the west side on Vineyard Drive, an area now bursting with vineyards and wineries. The late wine pioneer and “Godfather of Zin” Art Norman and his wife Lei grew their vines and business from the ground up, researching and fine-tuning as they went to create the best quality grapes possible.
After twenty years of premium grape growing, they decided to start their own winery in1992. Though they had envisioned a small operation, producing perhaps a few thousand cases of wine per year, the instant success and acclaim they achieved led them to grow. The rich, concentrated wines of Sculpterra are the result of combining exceptional fruit from the winery’s estate vineyards and select Paso Robles vineyards with meticulous hand-crafted winemaking. Gentle handling, using traditional gravity methods ensures that the integrity of the wines stay intact. Sculpterra wines are aged an average of 12 to 18 months in American, French and Hungarian oak.

THE ASUNCION RIDGE EXPERIENCE
The journey began when Winemaker, Philip Krumal and Entrepreneur, Michael Dilsaver met in a wine appreciation class in 1995. Their love of fine wine, great food and inspiring friendships lead to the ultimate dream of “living the wine country dream.” Their first Pinot Noir vineyard was planted in 2002 in the Santa Lucia Mountains overlooking Morro Bay, thus starting the Asuncion Ridge story. Philip and Michael’s philosophy is a simple one…”wine begins in the vineyard.” To this end, a watchful eye is given to every step of the process from “the vineyard to the bottle.”

The Rotta tasting room and winery is located in the Templeton hills, and features a unique blend of history and modern winemaking technology. One thing that’s definitely staying is the old redwood sign with “Rotta Winery” neatly hand stenciled in white paint. “I painted that sign when I was ten years old,” remembered Giubbini.
Claiborne & Churchill is a small, family owned and operated winery, founded in 1983 and located in the heart of the Edna Valley, just outside San Luis Obispo, California. Inspired by the wines of Alsace, we specialize in premium dry wines made from Riesling, Gewürztraminer, and Pinot Gris grapes, as well as handcrafted Pinot Noir from several nearby vineyards. We also produce small lots of other wines, including a Dry Muscat, Chardonnay, Syrah, Cabernet Sauvignon, Sparkling Brut Rose, and a Port-style wine.

LXV’s winery is located in the exclusive Willow Creek area of the westside of Paso Robles near Linne Colado and Saxum. The Mittals currently source their fruit from other vineyards nearby, but have land set aside for planting some day.

A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years.
