Our tasting room is situated in the heart of the picturesque Edna Valley on California’s Central Coast, surrounded by vineyards and rolling hills.
We specialize in Zinfandels that express the natural qualities of our historic estate vineyard in the Arroyo Grande Valley.
Castoro Cellars, which has been making wine in Paso Robles since 1983, was started by husband and wife Niels and Bimmer Udsen. Niels studied Ag Business at Cal Poly San Luis Obispo. According to Bimmer, “When Niels graduated he wasn’t sure exactly what he wanted to do but the wine industry seemed appealing.” He started working at Paso Robles winery Estrella River Winery, and says Bimmer, “immediately fell in love with the wine business.”
Niels began making his own wine, which he and Bimmer would sell to friends and family. This eventually led to Niels and Bimmer starting Castoro Cellars, which now produces around 30,000 cases annually. Randy and Cheryl Phillips, owners of Red Soles Winery, make only about 2000 cases of wine each year, but farm 250 acres of grapes. All of the wine made at Red Soles is from grapes grown by Randy and Cheryl, and serves to showcase the grapes produced by the Red Soles vineyards.
Red Soles’ inviting tasting bar is located in the production area for the winery. Visitors are surrounded by barrels and shining stainless steel fermenting tanks as they taste through the Red Soles tasting menu, and they quickly see that this is an active, working winery. Seven Angels Cellars is a family owned, boutique winery located in Templeton, CA. We began making wine in 2009 with a small production of Petite Sirah. Since then we have increased production to around 3000 cases per year. Greg Martin is the owner/winemaker and Pamela Martin is the other owner and handles social media, food pairings, wine club and club events and the website. The story behind the name came from our passion for family. We have seven children in our blended family, our 7 angels.
We both grew up loving wine. Greg grew up in a rural area of California with neighbors who grew wine grapes. He spent a lot of time learning about the entire process from the vine to the bottle from his patient neighbor. He continued his interest in wine as a US Coast Guard when he was stationed in the bay area and had easy access to the multitude of wineries in Sonoma and Napa. Pamela comes from a family of foodies and wine enthusiasts. She took courses in college in winemaking and learned the biology aspect of wine. She worked in catering and on TV as a home economist for a cooking show. Pairing food and wine to create an interesting and delightful balance in a meal has become an obsession for her.
We married in 2008 and started making wine the following year. We specialize in Rhone blends as well as single varietals. Greg has his eyes, hands in every aspect of the process from the field to the bottle. Pamela has the palate and the nose and is instrumental in the blending.
We participate in many non-profit and charity events as our way of giving back. We are involved with Precious Life Shelter in Los Alamitos, a shelter for homeless pregnant women and Goals for Life, and NFL program for troubled youth. We are the official wine sponsor for the Congressional Cup held annually at the Long Beach Yacht Club. We also sponsor the Wooden Boat Festival in Newport Beach each year.
Many of our wines have been recognized by Wine Enthusiast with ratings in the 90’s. We’ve also received numerous gold medals at California and International wine competitions. This year we were awarded a gold medal from the mid-state fair for our 2015 Pinot Noir and a gold medal from the Orange County Wine Competition for our 2015 Tempranillo.
We believe in the “less is best” approach to winemaking. Less manipulation and more natural methods of making our wine. Greg likes to play with using different kinds of oak in our barrel program. Our wines are food friendly, approachable in both flavor and price point. We’d love to share with you more about our methodology, including, why we keep our price point where it is and how we see Seven Angels integrated on an evolved, noteworthy, wine list.
The concept of Chronic Cellars came about in the midst of harvest in 2004. We had used the term “The Chronic” to describe likable objects before, but we had never considered it a suitable descriptor for wine. We sat alongside the crush pad one evening in our wine stained clothes and wet boots laughing about the idea of a wine that targeted a casual lifestyle.
Jake and I were raised in the heart of Paso Robles wine country. Wine and the art of wine making have been apart of our lives since the early 80’s. After graduating from college we both returned to Paso Robles and joined the team at Peachy Canyon Winery. After a decade each of immersing ourselves in all aspects of the wine industry we decided to do our own project. We wanted to try something new and put the tools we have gathered to work on our dream. We had a vision and a desire to make our statement in the wine industry that we could not deny. After four years we took our first step toward Chronic Cellars.
Mystic Hills Vineyard is a boutique vineyard nestled in the beautiful rolling hills of San Miguel, California. We are blessed with crisp mornings acquired from the Pacific Ocean influence, and hot days soothed by the cooler afternoon winds. This climate, with the beneficial temperature swings, helps to create superior fruit for our wines.

Our vineyards are located six miles north of Paso Robles, CA, near the eastern slope of the Santa Lucia Mountains. The mainly southern-facing, rolling hill vineyards are planted on well-drained, moderately deep, silty clay loam soils. Hot summer days and cool nights provide ideal growing conditions for the vines. LXV’s winery is located in the exclusive Willow Creek area of the westside of Paso Robles near Linne Colado and Saxum. The Mittals currently source their fruit from other vineyards nearby, but have land set aside for planting some day.
The new tasting room is located at 1306-B Pine St. at the corner of 13th and Pine streets in downtown Paso Robles. Norman Vineyards, established in 1971, was one of the original vineyards to be planted in Paso Robles, on a cool stretch of the west side on Vineyard Drive, an area now bursting with vineyards and wineries. The late wine pioneer and “Godfather of Zin” Art Norman and his wife Lei grew their vines and business from the ground up, researching and fine-tuning as they went to create the best quality grapes possible.
After twenty years of premium grape growing, they decided to start their own winery in1992. Though they had envisioned a small operation, producing perhaps a few thousand cases of wine per year, the instant success and acclaim they achieved led them to grow.
