OUR WINEMAKING PHILOSOPHY
At JUSTIN, we combine traditional Old World methods—like hand-harvesting and small-barrel aging in French oak—with New World technology. For example: the “Air Knife,” an ingenious process invented by our winemakers, boosts grape quality and efficiency.

Once the grapes are harvested, our winemakers—some of the best in the business—gather to sort, select, age, taste, blend and decide what goes into every bottle.

Mitchella is a small family owned estate vineyard and winery located on the eastside of Paso Robles along the HuerHuero Creek, we are committed to making small lots of premium handcrafted wines and believe it starts by attentively cultivating quality wine in the vineyard. A deep and abiding respect for Laetitia’s estate-grown fruit is the mark of Eric Hickey’s winemaking. Beginning his hands-on training in the cellar at the tender age of 16, Eric has lived and breathed Laetitia all the way to the top, where he is now the Head Winemaker and the winery’s President. “I keep it simple,” he says, “and I stay eye-to-eye with Lino because the interplay between us is what determines the wines’ quality. Everything done in the cellar starts with what we do out in the vineyard.” While Eric makes a point of experimenting with small lots each vintage, his style is fundamentally built upon finding balance, finesse, and the essence of the fruit he has come to know for so many years. They say good fences make good neighbors, but it was a love of wine and winemaking that was the connection between Opolo proprietors Rick Quinn and Dave Nichols.

Their two families have lived side-by-side in Camarillo since 1996. As Nichols remembers, “I knew Rick to say hello to, but that was about it. Then one day, he said to me, ‘Hey Dave, I just planted 10,000 grapevines!’” And so began the evolution of Opolo, one of Paso Robles’ premier labels. Quinn and Nichols have been neighbors in two counties since 1997 when Nichols bought vineyard property adjoining Quinn’s. Together they now own and farm nearly 300 acres of vines on the east and westside of Paso Robles.

As a small family owned vineyard and winery, we consider ourselves fortunate to be part of a “New World” of wine exploration. Our passion goes into creating an exceptional vineyard, using intensive growing practices resulting in richly handcrafted wines. Come join us, and taste the complex flavors of Rio Seco wines. Sarzotti Winery and Vineyard serves as the Sarzotti family’s vehicle for sharing what they love to do—make wine. The winery is owned and run by the Sarzotti family, and they see it as a way to do what their family has been doing for generations: to make wine that can be enjoyed with friends and family.

Jim Sarzotti and his wife Cheryl as well as their son James and his wife Jenne, all live and work on the Sarzotti Winery and Vineyards property in beautiful Templeton, CA. James and Jenne’s children also live on the property. The Sarzottis have farming in their blood—fifteen years ago they relocated to Paso Robles from Southern California at James’ suggestion. James knew that his father had always loved to grow grapes and make wine, and saw in Paso Robles an opportunity to do this together as a family.

Claiborne & Churchill is a small, family owned and operated winery, founded in 1983 and located in the heart of the Edna Valley, just outside San Luis Obispo, California. Inspired by the wines of Alsace, we specialize in premium dry wines made from Riesling, Gewürztraminer, and Pinot Gris grapes, as well as handcrafted Pinot Noir from several nearby vineyards. History:

In the early 1970’s Michael Gill began his own practice as a dentist in Bakersfield. In 1977 during his weekend retreats to the central coast, Gill visited a barren 25 acres for sale in Peachy Canyon. At the time he acknowledged he had little intuition of the potential this property had for growing grapes. However his friend Robert Nadeau recognized its potential and lay out the grid work for the vineyard in 1998. After years of hard work, the perfect temperature and premier sole has created a perfect grape growing property. Now Gill Cellars is producing a modest 1,000 cases annually, ensuring quality and control in every bottle.

About:

Growing up in the oil fields of Taft, Gill was first introduced to fine wines during his postgraduate years in dental school. His best friends parents were professional photographers, and were hired to create extravagant displays of fine wine, cheeses, and food. The fate of these displays were at the mercy of Michael and his friends appetites, which would act as the initial catalyst of his taste for fine wine.

We are a tiny winery located on a Westside hilltop in Paso Robles. We craft wines that are a fascinating marriage of power and elegance. We take what comes from the vineyard and keep it simple and pure. Our grapes are always encouraged to speak for themselves, and if you treat them with the utmost of care, they will always quietly reveal from where they came. We follow old-world farming and winemaking techniques and our boutique vineyard is purposely geared to produce tiny yields of highly flavoured fruit. We use minimal intervention during the winemaking process, and let the fruit expose its story within the glass.

There are only two of us, and we personally handcraft all of our wines in extremely small lots. Production is low in quantity, and large on quality. Wine is our artistry; one of our greatest creative pleasures. You will discover our attention to detail and exclusive signature within each and every wine; flavours that are deeply intense, velvety rich, and thoroughly elegant. We strive to make the kind of wines that leave an enduring memory on your palate.

Mystic Hills Vineyard is a boutique vineyard nestled in the beautiful rolling hills of San Miguel, California. We are blessed with crisp mornings acquired from the Pacific Ocean influence, and hot days soothed by the cooler afternoon winds. This climate, with the beneficial temperature swings, helps to create superior fruit for our wines.
